The Eagles' Nest Viognier 2022 captivates with its luminous green-gold color, a testament to its careful aging in barrels. The bouquet reveals delightful notes of fresh lemon and lime complemented by a touch of minerality, alongside whispers of exotic fruits and blooming jasmine. Allow the wine to aerate slightly in the glass to fully appreciate its enticing oak nuances. On the palate, it strikes a vibrant and full-bodied impression, reflecting the characteristic spice of Viognier along with charming glimpses of quince compote and kumquats. Its crisp freshness and subtle wood characteristics promise a refreshing finish that lingers pleasantly.
The grapes for this Viognier were meticulously handpicked and transported to the winery, where they were chilled overnight to 5ºC. The next morning, they were gently pressed. The juice was left to rest in stainless steel tanks overnight, after which only the clear premium juice was transferred to new and used barrels. The fermentation process was maintained at a relatively low temperature of 18ºC. During barrel aging, the wine was stirred bi-weekly (batonnage) and topped up lightly. After six months, the wine was racked from the barrels and blended with the stainless steel component. Prior to bottling, the wine underwent a light filtration.
