The Eagles' Nest Merlot impresses with a captivating plum hue and reveals enticing aromas of red currants, black cherries, and deep chocolate, refined with delicate spice notes and luscious vanilla. On the palate, this smooth Merlot showcases juicy flavors of black and red berries, elegantly enveloped by velvety tannins. Fine hints of rosemary and olive tapenade introduce a delightful herbal freshness. A subtle pepper hint, combined with a touch of dark chocolate, expertly rounds off this exquisite tasting experience, concluding with a long, resonating finish.
Die Trauben für diesen Merlot wurden per Hand gelesen, entrappt und in offenen Gärbehältern von mittlerer Größe zerquetscht. Der Gärungsprozess dauerte neun Tage bei einer kontrollierten Temperatur von 24-30 C an. Der Wein reifte in Fässern aus neuer Eiche sowie in zweit- und drittbefüllten Fässern, in denen auch die malolaktische Fermentierung ihren Abschluss fand. Nach 18 Monaten wurde der Wein in Stahltanks umgefüllt und verschnitten. Vor dem Abfüllen auf die Flasche wurde der Wein leicht filtriert.
