The Thelema Sutherland Cabernet Sauvignon enchants with an aroma of dark berries, accentuated by rich cassis. Its deep ruby hue highlights classic Cabernet notes of ripe black currants, plums, and a delicate touch of graphite. On the palate, it marries elegance with concentration, coupled with hints of cedar and spice. The fine tannins and refreshing acidity offer good structure and balance, leading to a long, persistent finish.
Das handgelesene Traubengut wurde mit groβer Sorgfalt sortiert und anschlieβend komplett entrappt und gequetscht. Die siebentägige Fermentierung fand unter regelmäβigem Umpumpen der Maische in Tanks aus Edelstahl statt. Nach Abschluss der alkoholischen Gärung wurde der Wein in Fässer umgepumpt, wo die malolaktische Fermentierung ihren Abschluss fand. Abschlieβend reifte der Wein 18 Monate lang in Fässern aus französischer Eiche (30% Neuholz).
