The Ataraxia Pinot Noir dazzles with its radiant ruby tone, reflecting light beautifully. The sophisticated bouquet reveals enticing scents of ripe red cherries, aromatic pomegranates, and moist forest floor, enhanced by hints of delicate spices and new oak. Das Traubengut für den Ataraxia Pinot Noir wurde per Hand gelesen, mit großer Sorgfalt sortiert, entrappt und anschließend sanft gequetscht. Es folgte eine zehn Tage lange Kaltquellphase in offenen Gärbehältern, woraufhin der 22 Tage lange Fermentierungsprozess bei geregelten 28°C stattfand. Nach Abschluss der Gärung wurde der Wein in ausgewählte französische Eichenfässer abgepresst, von denen 22% Neuholz ausmachten. Der Wein reifte eine Gesamtzeit von 11 Monaten in französischen Barriques.
