The False Bay Peacock Wild Ferment Merlot 2024 offers a delightful ruby color with enticing aromas of blackcurrants, ripe plums, and floral notes, complemented by subtle hints of pencil shavings and green herbs. On the palate, the captivating aromas emerge seamlessly, delivering a vibrant balance of fresh acidity, perfectly integrated tannins, and a long, elegant finish.
The grapes for this splendid Merlot were destemmed and fermented spontaneously with wild yeast in wood. Gentle 'punch-downs' were performed twice daily. After fermentation, the wine spent 30 days on the skins to facilitate tannin integration and maximize color extraction. It aged for nine months in third- and fourth-fill French oak barrels.
