The Ataraxia Serenity has been crafted with exceptional care, reflecting the artistry of winemaker Kevin Grant. This distinctive blend pays homage to South Africa’s unique varietal identity, capturing a sense of serenity.
Since 2006, Grant has been captivated by the notion of a 'cool climate' Pinotage combined with its ancestral grapes. This blend is the result of years of meticulous experimentation. Each grape variety was hand-picked at optimal ripeness and subsequently underwent separate fermentation, respecting its individuality. Maturing in small 225L French oak barrels, this vintage showcases a wine that transcends the typical Pinot Noir boundaries. The 2021 Serenity brings forth a harmonious profile, with alluring aromas of fragrant tobacco, ripe red berries, and finely integrated oak flavors.
Die verschiedenen Rebsorten wurden handgelesen, mit großer Sorgfalt sortiert, in offenen Gärtanks leicht angequetscht und einer 7-10 Tage langen Kaltquellphase auf der Haut unterzogen. Noch vor Abschluss der Fermentierung ging es in die Presse und der Wein wurde separat nach Rebsorte in Fässer transferiert, wo die malolaktische Gärung ihren Abschluss fand. Anschließend reifte der Wein 11 Monate lang in ausgelesenen französischen Barriques, von denen 32% Neuholz bzw, erstbelegtes Holz ausmachten. Nach 11 Monaten Reifezeit wurden die verschiedenen Rebsorten verschnitten und zum fertigen Genuss auf die Flasche gefüllt.
