Dieser „Vin de Terroir“ wurde aus Ataraxias erstem Jahrgang von Bio-Trauben hergestellt, die auf den eigenen Weinbergen angebaut werden. Er stellt eine Reise der Umstellung auf Bio-Prinzipien vor, die vor fünf Jahren begann. Spontane und vollständige Fassgärung ohne Zusätze mit anschließender Reifung in speziell ausgewählten französischen Eichenfässer, die ausschließlich von burgundischen Böttchern stammen, waren Teil eines sanften und minimalistischen Weinbereitungsansatzes ohne Eingriffe in die natürlichen Vinifizierungsabläufe.
