The De Trafford Merlot 2020 exemplifies the artistry of this distinguished estate. Exhibiting a deep crimson color, it unfolds with alluring aromas of violets, ripe plums, and cherries, enhanced by subtle spices. These enticing notes carry through to a rich, full-bodied palate, where fine, well-integrated tannins meld beautifully with creamy nuances of oak. The wine concludes with a prolonged, juicy finish, demonstrating its extraordinary balance.
Das Traubengut für den de Trafford Merlot wurde per Hand gelesen und bei Ankunft in der Kellerei zunächst entrappt und anschließend in großen Gärtanks saft angequetscht und fermentiert. Die Fermentierung fand spontan statt, d.h. nur die auf den Trauben natürlich vorkommende Hefe setzte die Gärung bei einer kontrollierten Temperatur von max. 30°C in Gang. Der Fermentierungsvorgang dauerte zehn Tage lang an, wobei der Tresterhut bis zu dreimal täglich untergehoben wurde. Nach Einsatz der traditionellen Korbpresse wurde der Wein in französische Eichenfässer gefüllt, wo auch die malolaktische Gärung stattfand. Anschließend reifte der Wein 20 Monate lang in französischen Barriques, von denen 35% Neuholz ausmachten.
