Die Trauben wurden vollständig von Hand entrappt und direkt in offenen zwei Tonnen Tanks gequetscht (ebenfalls von Hand). Dann wurde der Saft bei 30°C spontanvergoren mit natürlichen Hefekulturen und mit zwei bis drei 'punchdowns' der Maische am Tag. Der Wein wurde anschließend direkt durch die Korbpresse in die Fässer geleitet, wovon ca. in Drittel neue französische Eiche ausmachten. Dieser Wein reifte 22 Monate lang und wurde dann von Hand ohne Filtrierung auf die Flasche gefüllt..
