Treatment in the cellar The grapes for the Clos Malverne Sauvignon Blanc were hand-picked at optimal ripeness and, upon arrival at the winery, were completely destemmed, crushed and cooled to 10°C on the skins for 24 hours. Fermentation took place at a controlled temperature of 14-16°C in stainless steel tanks. After fermentation was complete, the wine was left on the lees for as long as possible before being bottled for enjoyment.
