The Buitenverwachting Maximus is aptly named (Latin for 'the greatest'), representing the pinnacle of wine craftsmanship. It showcases a radiant, pale lemon-yellow in the glass. The nose is graced with an enticing bouquet of succulent melon, nectarine, and fresh gooseberry, creating a sensory delight. On tasting, the previously hinted aromas evolve into exquisite flavor nuances, promising a refined tasting experience. This beautifully dry and full-bodied barrel-fermented Sauvignon Blanc has a long, lingering finish, distinguishing it as an exceptional ambassador of this noble varietal.
Wine description according to Weinwisser 03/2017:
“18 months in barrel, 10% in new oak. Still significantly influenced by the oak aging, exhibiting buttery and slightly caramelized roast aromas that become notably more nuanced with time. On the palate, it is dense and velvety, showcasing ample power while remaining clear and precise, with hints of pineapple. A substantial wine whose Sauvignon character unfolds with subsequent exposure to air.”
The grapes for Buitenverwachting Maximus were partially whole-bunch pressed, with the other part receiving a 12-hour skin maceration. Fermentation was initiated using five different yeast cultures at a controlled temperature of 12ºC - 16ºC. After 21 days, fermentation was complete, followed by 15 months of aging in French barriques.
