Treatment in the cellar
Die 10-15 Tage lange Gärung fand bei einer geregelten Temperatur von 27° C in Tanks aus Edelstahl statt. Nach einer ausgedehnten Quellphase auf der Haut schloss der gesamte Wein die malolaktische Fermentierung im Fass ab. Der Wein reifte anschließend 12 Monate lang in französischen Barriques, von denen 20 % Neuholz ausmachten.
