From the outset, crafting exceptional wines was the goal of this articulate winemaker from the Douro Valley, where he pours his entire passion. Influenced by a long family tradition in winemaking alongside an inherited, 40-hectare vineyard home to 100-year-old vines, the biologically grown grapes are still trodden in stone basins and matured in new barriques. The result is elegant wines with layers of chocolate, wood, cherries, blueberries, blackcurrants, grapefruit, and elderflower, presenting a fine acidity, excellent tannin structure, and a potent fruity-spicy finish.

The Unique “Pintas” Achieving Global Status

A noteworthy project is the “Pintas”, initiated alongside his wife Sandra Tavares da Silva in 2001 near their Quinta da Manoella. This couple created a distinguished, mineral-rich wine, now amongst Portugal’s best, having developed a cult following among connoisseurs worldwide. The grapes derive from five hectares of very old vineyards in a prime location in Cima Corgo, planted with nearly 30 different varietals. Rigorous selection ensures the success of this wine, which ages 70% in new French barriques.

"Wine & Soul" – Jorge's Passion Project

The story of Pintas closely ties to the founding of “Wine & Soul,” a personal project by Jorge Serôdio Borges and Sandra Tavares da Silva with the mission to produce characterful wines of the highest quality. Their vineyards are located around 20 kilometers distant from the hot Douro region, at altitudes of over 400 meters. Here, they also harvest ancient olive trees to produce some of Portugal’s finest olive oil.

Excellent Red Wines from Quinta do Passadouro

Jorge’s story continues as the co-owner and manager at Quinta do Passadouro owned by Belgian entrepreneur Dieter Bohrmann. This estate in the Cima de Corgo region is well-known not just for its outstanding Port wines but also for its remarkable red wines. Grapes sourced from the prime sites yield exquisite reds, with the “PASSA” hailed as one of the finest in its price range within Portugal.

Three Talented Winemakers of the M.O.B Wine Brand

Finally, Jorge Serôdio Borges established the wine brand M.O.B on the historic Quinta de Curojao near Serra da Estrela in Dão with fellow Douro winemakers Jorge Moreira and Francisco “Xito” Olazabal. M.O.B. stands for their last names, and is a collaborative project born from their shared passion for the old wines of Dão.
