The Blackwater Sophie Cabernet Franc Cinsaut is a well balanced and highly rated cuvée – the Cabernet Franc comes from Stellenbosch and the Cinsault grapes from Darling. 

The wonderful spice and inviting juiciness are at the forefront, and the nose reveals nuances of cherry, raspberry, blackcurrant and gravel, which slowly open up to reveal hints of floral notes. On the palate, it is thoughtful, with aromas of violets, sage and boysenberries, as well as hints of graphite and green herbs in the background. The tannins, reminiscent of black tea, give the wine a wonderfully grippy texture.

Treatment in the cellar Cinsaut and Cabernet Franc were harvested by hand, with the Cabernet Franc completely destemmed, while 80% of the Cinsaut grapes were fermented whole bunch. Both fermented in open vats with a capacity of one tonne. After 3-4 weeks of fermentation on the skins, the wine was pressed into French oak barrels (30% new wood), where it spent 15 months maturing. The result was bottled with a subtle amount of sulphur and without clarification or filtration.
