Information about "Blackwater Sophie Cabernet Franc Cinsaut 2022"

The Blackwater Sophie Cabernet Franc Cinsaut 2022 masterfully blends Stellenbosch Cabernet Franc with Darling Cinsaut, offering an exquisite aromatic profile characterized by cherries, raspberries, and hints of florals. On the palate, expect a complex structure featuring violet, sage, and an undertone of graphite and fresh herbs. The tannins create a pleasant, structured mouthfeel.

Treatment in the cellar Cinsaut and Cabernet Franc were harvested by hand, with the Cabernet Franc completely destemmed, while 80% of the Cinsaut grapes were fermented whole bunch. Both fermented in open vats with a capacity of one tonne. After 3-4 weeks of fermentation on the skins, the wine was pressed into French oak barrels (30% new wood), where it spent 15 months maturing. The result was bottled with a subtle amount of sulphur and without clarification or filtration.
