The Black Elephant Vintners Two Dogs a Peacock and a Horse Sauvignon Blanc 2025 shines in the glass with bright green reflections, exuding enticing aromas of tropical fruits. The nose is caressed by a multifaceted bouquet of kiwi, passion fruit, lime, and apple. On the palate, the wine reveals a lively and concentrated impression, accompanied by fruity nuances and hints of melon and Cape gooseberry. A creamy fullness, resulting from prolonged lees contact, harmonizes with a lively acidity and fine minerality, leading to a refreshing finish.
Hand-harvested in the early morning, the grapes were destemmed and macerated before gentle pressing. After a three-day juice settling period, the clear juice was separated and fermented with selected yeasts at controlled temperatures of 13-16°C for 21 to 30 days. Post-fermentation, the wine matured for two months on the lees, stirred regularly to enhance complexity and structure before final blending and bottling.
This wine is naturally fermented, contains no added sulfites or sugar, and underwent no oak aging.
