This sparkling wine enchants with alluring biscuit undertones, merging citrus freshness with invigorating mineral acidity, making it a delightful wine with structure and length. Crafted as a Cap Classique, it undergoes bottle fermentation and matures on the lees for 16 months before disgorgement. The barrel fermentation adds complexity, while the absence of malolactic fermentation preserves its refreshing character.

Treatment in the cellar Hand-harvested Chardonnay is gently pressed and fermented in stainless steel, with a portion in seasoned french oak. Secondary fermentation is in bottle and is lees-aged for 16 months. There is no malolactic fermentation, preserving tension and elegance. The wine is disgorged and dosed to a dry style.
