Harvesting occurred over a span of 12 days, with fresh juice added daily to the fermenting batch, extending the alcoholic fermentation by about 20 days. Fermented exclusively with indigenous yeast, 25% in old barrels and large foudres, the wine was aged on the lees for ten months before bottling with occasional stirring.
