The story of Julien Schaal’s South African wines began with a harvest experience in Hermanus, where he encountered the distinctive climate of the Cape’s coastal vineyards. Fascinated by the interplay of altitude, ocean influence and varied soils, he decided to explore these conditions through small-scale production. Over time the project developed into a focused range of wines highlighting specific vineyard sites.

Most grapes are sourced from cooler regions such as Elgin and Overberg, where maritime winds moderate summer temperatures. Many vineyards lie at elevated positions, allowing grapes to ripen gradually and retain natural acidity. This slow maturation is essential for building aromatic complexity and structural precision in the finished wines.

The range includes Mountain Vineyards Chardonnay, a blend of fruit from several cool sites that emphasises balance and mineral freshness. Evidence Chardonnay originates from an older vineyard in Elgin and shows greater depth and concentration. Influence Pinot Noir complements the portfolio with a red wine style built on elegance and vibrant fruit.

Winemaking follows a careful approach designed to preserve vineyard expression. Hand-harvested grapes are gently pressed, with fermentation taking place in both stainless steel tanks and French oak barrels depending on the wine style. Oak influence remains measured, supporting texture while allowing fruit purity to remain central.
