The Vondeling Babiana 2023 is a stunning white wine blend that showcases a delicate straw yellow hue. It opens with an enticing bouquet of roasted almonds, sweet cashews, zesty lime, fine apricot, wild honey, and hints of tropical pineapple. The palate is fresh, lively, and beautifully structured, revealing significant density and length. Flavors of oatmeal, white pepper, floral jasmine, mint, ginger, and creamy lemon meringue intertwine with gently integrated oak notes, offering a remarkable tasting experience.
The grapes were handpicked at optimal ripeness and underwent a 24-hour cooling phase upon arrival at the winery. The Chenin Blanc was pressed whole bunch, with the juice immediately filled into barrels for natural fermentation, ensuring maximum structure, complexity, and aging potential. Grenache Blanc, Roussanne, and Viognier were destemmed, underwent an eight-day cold soak on skins, pressed into barrels to complete fermentation. All varieties underwent malolactic fermentation and aged on lees for ten months before blending and bottling.
