Presented in a delicate lime-green hue, the Rustenberg Wild Ferment Unwooded Chardonnay enchants with its captivating bouquet of fresh citrus notes and a subtle touch of creamy oatmeal. Aromas of lemon, tangerine, and pine needles meld seamlessly on the palate, culminating in a clean, chalky finish. The absence of oak accentuates this wine's elegance, emphasizing its fresh and fruity characteristics.
This Chardonnay is fermented using the wild yeast present on the grapes at harvest, enhancing its fullness and complexity, while being aged on the lees.
Das handgelesene Traubengut wurde bei Ankunft in der Kellerei zunächst komplett entrappt und anschließend gequetscht und abgepresst. Der dabei gewonnene Saft fermentierte unter Zugabe ausgewählter Hefekulturen in Tanks aus Edelstahl und reifte nach Abschluss der alkoholischen Gärung unter einmal wöchentlichem Aufrühren der Hefe noch weitere zwei bis drei Monate im Stahltank.
