The Rickety Bridge Paulina's Reserve Semillon 2023 entices with fresh aromas of zesty lime and juicy apple alongside delightful hints of honey, nougat, and beeswax. On the palate, this wine exhibits a rich and opulent character with delicious flavors of honey and citrus perfectly balanced by integrated oak notes, lively minerality, and a long, creamy finish.
Die Fermentierung fand ohne Einsatz von Hefe in kleinen Fässern aus französischer Eiche statt, von denen 20 % Neuholz und 80 % bereits zuvor belegtes Holz ausmachten. Der Most wurde bei geregelten Temperaturen zwischen 14 - 17 ºC vergoren. Die Hefe wurde dabei zwei Monate lang täglich aufgerührt (batonnage) und anschließend für weitere drei Monate alle zwei Wochen. Anschließend reifte der Weine 11 Monate lang in französischen Barriques.
