The Diemersdal Sauvignon Blanc Reserve is a complex white wine with a full-bodied character, beautifully showcasing the purity of the fruit. Sourced from high-altitude vineyards near the Atlantic, it offers an intense bouquet of citrus, lime, and passion fruit, accented by a subtle sweetness that captivates the senses. On the palate, a refined structure unfolds, with lively acidity providing impressive balance. The finish is clear and clean, a result of careful vinification. Treatment in the cellar

The grapes were fully destemmed, crushed, and allowed to rest on skins for 12 hours before pressing. The resulting juice was inoculated with selected yeast cultures, kickstarting a three-week fermentation at controlled temperatures of 14-16ºC. After fermentation, the wine aged on its lees for five months, with weekly stirring (batonnage) to enhance mouthfeel and concentration. It was bottled unfiltered.
