The Damascene Stellenbosch Cabernet Franc offers an exuberant bouquet of fresh fennel, blackberry, maraschino cherries, dried violets, graphite, and hints of sweet tobacco. Evoking visions of sunlit tomato vines and campfires under starlit skies, this aromatic gem invites exploration. The palate is dynamic and powerful, revealing a core of iodine layered with red and black currant, pomegranate, and cranberry notes. These fresh fruit elements are complemented by vibrant acidity and an exceptionally pure, meaty, and structured tannin profile, unmasked by oak. The wine concludes with a precise, long, and pleasantly dry finish.
The grapes were hand-harvested on March 17, 2022, at a ripeness of 24.9 °B.
After destemming, they were placed in tulip-shaped concrete fermenters, where whole berries underwent three days of cold maceration before fermentation commenced. To ensure optimal extraction, pumping over occurred up to three times daily, with fermentation temperatures reaching a maximum of 28 °C. Natural malolactic fermentation occurred during the 11-month aging in 1000-liter French oak barrels.
