Treatment in the cellar

The hand-picked grapes were selected bunch by bunch and berry by berry with great care for the further production process and lightly crushed before going into the press. The juice obtained was left to rest in steel tanks at regulated 12˚ C and after two days was filled into clay amphorae where natural fermentation began.
