The Boschendal 1685 Chardonnay impresses with its lively and spicy bouquet of lemon, cinnamon, and nutmeg that awakens anticipation for the first sip. On the palate, it reveals a creamy and rich texture, showcasing remarkable complexity and refined smoothness, accompanied by delightful notes of vibrant citrus and ripe stone fruits.
Die Chardonnay-Trauben fermentierten unter Einsatz ausgewählter Hefekulturen zunächst in Tanks aus Edelstahl, wobei jedoch noch vor Abschluss der Gärung 70% des Safts entnommen und in französische Eichenfässer umgefüllt wurde. Nach Beendigung der Fermentierung reifte der Wein noch weitere zehn Monate auf der feinen Hefe im Fass (12% Neuholz, 88% zweit-, dritt- sowie viertbefüllte Fässer). Die Weine wurden während zehn Monate regelmäßig aufgerührt (batonnage), um so ein fülligeres und üppigeres Mundgefühl in den Wein zu übertragen.
