Treatment in the cellar

Each variety was vinified separately: Sauvignon Blanc in amphorae and concrete or ceramic eggs, Semillon in neutral oak and Chardonnay in amphorae and barrels. After ageing on the fine lees, the components were carefully assembled and bottled as a balanced, terroir-driven blend.
